Farmers work closely with researchers from Shizuoka University, studying how soil health directly influences flavor development in tea. Tea plants are shaded before harvest to increase amino acids and caffeine, enhancing umami and vibrancy. After harvesting, the leaves are gently dried, carefully de-stemmed, and finely stone-ground into a silky, vivid green powder of remarkable purity.
